PROJECT OBJECTIVES

Growth and innovation

The main objective of the project is to diversify the operations of the central kitchen of the GRECO restaurant chain located in Milejowice by introducing catering services for external clients, consisting of preparing and delivering food under a contract concluded with the client for specific events to locations designated by the client.

The project also includes preparing and delivering food for external recipients (business clients) and enabling electronic meal ordering in GRECO restaurants in Wrocław.

PROJECT SCOPE

Three key tasks

Purchase of fixed assets

Fixed assets necessary for implementing the investment, the green transformation and the digital transformation.

  • MAP and SKIN protective-atmosphere packaging line
  • Gyros/kebab meat slicing robot
  • Multifunctional food preparation device
  • Automatic fryers (3 units)
  • Cold room for storing finished products
  • Label printer
  • Self-service kiosks with KDS module and queueing system (4 units)

Training service

Improving employees’ skills in the area of the new product offering and digital competences.

  • Modern thermal processing techniques: meat, fish, vegetables
  • Principles of preparing a product for the packaging process
  • MAP and SKIN packaging technology
  • Use of eco-friendly packaging and recycling
  • Operation and programming of automatic fryers
  • Operation of the self-service kiosk system

6 people will be trained, including 3 women.

Technical consulting

Consulting service for developing a new business model.

  • Development of new recipes and portions
  • Price calculation development
  • Selection of appropriate packaging
  • Preparation of design guidelines

Expected results

Modernization of the production base

The purchase of a modern food production line will enable the production of food with an extended shelf life, which is key to acquiring a new group of business clients.

Change in production method

Automated production with protective-atmosphere packaging technology ensuring top quality and longer shelf life.

New recipients

In addition to the restaurants’ retail clients, MEDSUN will reach external recipients, including business clients for whom catering services will be provided.

Modern solutions

Improved product quality, longer shelf life, the possibility of using eco-friendly packaging and an attractive product presentation.

New service range

Preparation and delivery of food for external recipients (catering) with a longer shelf life, packed in eco-friendly packaging.

New suppliers and partners

With the introduction of the new product offering, the circle of suppliers will expand, including suppliers of eco-friendly packaging.
